I have a Blodgett 1060B-S, the oven will tweek at the second round of pizzas put in and the stones will struggle to cook the pizzas. Then the pizzas will either start to overcook on the bottom and then under cook on the bottom, with vice-a-versa on the tops. I have replaced the Regulators, defusers, Burner assembly, Thermostat thus far....

have you checked the speed control?? it maybe off on the speed run some empty pans thru and time each one I will need a model to give you the entry and exit times for your model before we can futher. do it 3-5 times let me know

you may have a couple problems here or just one.
1. Check the incoming gas pressure I believe on this oven it requires 7" of water column to operate.
2. check the output gas pressure at the gas valve it should be around 3.5" water column.
Looks like to me that either your utility company might have restricted the supply pressure or you may have a faulty gas valve or the gas valve might just need adjusted.

I think ill give it a try for you. The gas lines come in thru you cutoff valve then thru you gas valve and on to the burner. right before the burner you will see a bell shape fitting. The gas line is in the center of the fitting and there will be some opening around this fitting That fitting has dust clogging it up. This is where the gas mixes with the air Turn your oven off and blow this fitting out.
