Is there any way that my multifunction printer (Pixma MF500) can be set up so that all it's functions are useable and accesable wirelessly to my Macbook? I do have an old desktop PC kicking around, can this be utalised in some way for this?
I'm sorry to say that the answer to your question is no. You can print wirelessly with most printers using either an Airport Extreme Base station or an Airport Express, but for scanning, you will need to be physically connected to the scanner.
If you wanted to, you might be able to set up that old desktop to be permanently (and physically) connected to the scanner, and then you could either connect to that PC over your home network to access the scanned files, or you could potentially email them to yourself from the PC. That might be your best bet.
Hope this helps!
